Foul Mudammas

Recently I invited few friends over for dinner and my menu was Middle Eastern food for the main course. I prepared falafel, hummus, baba ganoush, fattoush salad, foul mudammas, garlic potato, manakish zaatar (ready-made) and pita. For appetizer, I made pull-apart bread, baklawa (middle eastern sweet), spring rolls and 2 types of fryums. I also prepare infused water. For dessert, I prepared fruit custard with chia seeds. It was super hit!

About foul mudammas, it is also called Foul or Ful in short. This is a famous dish from Egypt which is full of protein as it is made using fava beans. They eat this during breakfast and lunch and always serve warm. It’s very easy and simple dish but it tastes amazing.

I was thinking of preparing this dish for long time. My daughter in law and son talked about it and she always mentioned that her cousin prepares it really well. Recently I went to Middle Eastern store, they had Foul Mudammas (fava beans) cans on sale. I immediately thought about this dish. So when I had friends over for lunch, I decided to give it a try. Everyone loved it!

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Ingredients:
2 cans of fava beans (400 ml each)
1 small tomato chopped
1/2 onion chopped
2 cloves of grated ginger
1 tsp cumin powder
Extra virgin olive oil

Salad for garnishing
1/2 onion finely chopped
1 small tomato finely chopped
Small piece of cucumber finely chopped
2-3 garlic cloves grated
1 and 1/2 cup chopped curly parsley
1 cup chopped coriander leaves
1 tsp cumin powder
2-3 tbsp lemon juice
1 tsp sumac (optional)
Salt to taste
Extra virgin olive oil

Procedure:

1. If you are using dry fave beans, then soak it for at 4-5 hours and then pressure cook it for at least 4 whistle. If you are cooking it directly then cook until they are soft. I am using canned beans so not much cooking needed. In a pot, rinse and add beans, chopped onion and tomato, grated garlic, cumin powder and olive oil and some water or sauce from cooked beans. Cook on medium heat for 7-8 mins stirring frequently and cover with lid. Then let it simmer for few more minutes. Add some extra virgin olive oil on the top. You can mash some beans using spatula while simmering. Beans should be slightly runny.

2. While beans are simmering, mix all salad ingredients in a bowl and keep on side.

3. When you are ready to serve, take out one portion of beans in a bowl, add some salad on the top. Also squeeze fresh lemon juice, pour little olive oil, few pieces of green olives and serve. You can serve foul mudammas with fresh pita or baguette. I served it with home made pita chips which I prepared using store bought pita.

So next time you see fava beans, do remember this dish. You can also add chickpea in this dish. You can top it with tahini (sesame sauce/butter) for extra flavour. It is a very healthy dish with lots of protein. Fresh salad on the top adds so many layers of flavours with parsley, garlic, cumin. You have to try it to believe it!!
