Alert: Super easy and super duper tasty
During last gathering at my place, I prepared all Middle Eastern food like falafel, foul Mudammas, Fattoush salad, Hummus, Baba Ganoush (eggplant dip). I also prepared garlic potato with Mediterranean flavour for the dinner. You can cut big potato in cubes and bake it in the oven but I decided to use baby potatoes instead. Instead of baking, I used my cast iron appe pan to saute potatoes. I love appe pan (appam patra) which I also use to prepare batata vada, dal vada, manchurian balls, falafel, gulab jamun, etc. I don’t have to deep fry any of these dishes, I can prepare in very little oil.

Preparation Time: 10 minutes
Cooking Time: 20 – 25 minutes
Ingredients:
15-20 baby potatoes
Salt to taste
1 tbsp oil for cooking
Seasoning:
2 tbsp olive oil
2 garlic cloves grated
1 tsp Italian seasoning
1 tsp sumac
1 tsp zaatar
Salt to taste
Procedure
1. Par boil (half cook) potatoes in water with some salt. Mine took 6-7 minutes. Let it cool down. You can either keep or remove skin (your choice). Prick the potatoes slightly with a fork or sharp knife.
2. Heat appam patra (appe pan) on stove. Add 2-3 drop of oil in in hole. Add one baby potato in each hole and cook on medium heat. Flip it few times so skin turns brown from all sides. If you don’t have appe pan, you can spread in on baking tray, rub with oil and let it roast until skin turn brown.
3. Mix all seasoning ingredients in a bowl and whisk it.
4. When potatoes are crispy and brown, pull them out of oven and keep on side.
5. Just before serving, heat a wide bottom pan. Add 1 tbsp oil. When oil is hot, add roasted baby potatoes. Stir it in the pan so potato gets heat up. Then add seasoning mix, stir well. Taste the salt and turn off the heat. And you are done! Easy, isn’t it?
These potatoes are so aromatic. Italian seasoning with rosemary, oregano makes it super flavourful. Sumac adds nice tang and zaatar adds spice and flavour from Middle East. If you don’t have sumac, add amchur (dry mango) powder or lemon juice. Zaatar is prepared using thyme, roasted sesame seeds and sumac. This potatoes are very easy to prepare for big crowd. Last step takes about 2 minutes before serving. I would highly recommend this recipe for your next dinner party. You can serve as an appetizer or as a side dish with main course.
