Even if you are not dessert person, I can assure you that you will love this dessert. Very easy dessert with simple ingredients. Everything here is home made. I prepared everything ahead of time and assembled in 10 minutes before serving.
I go all out when I invite people over for dinner. I try something new every time. I make so many different types of welcome drink (virgin). I also like to serve dessert in a wine glass with different variations. I have seen everyone using custard but I decided to use kesar shrikhand and I’m so glad I did! I kept everything ready and assemble it just before serving. You can check out Fruit Custard with Chia Seeds, Fruit Chat with Whip Cream, Mango Mousse, Gulab Jamun recipes. All my guests first told me that they are too full to eat dessert but they cleaned their glass 😃. This dessert was so light and refreshing with just the right amount of sugar. I was absolutely thrilled by everyone’s reaction.

Ingredients:
Whipped cream
473 ml whipping cream (35%)
3 tbsp icing sugar or as per your taste
Tiny pinch of cardamom powder
Other ingredients
Kesar shrikhand
Grapes
Apples
Pear
Lemon juice
Chat masala
Mint
Chocolate wafer sticks
Rose crystals or nuts like pistachio, roasted almond, walnuts for garnishing
You can also add banana, strawberries, blackberries kiwi, chikoo, mango or any seasonal fruit
Procedure:
1. Before you start whipping the cream, place whipping cream, a metal mixing bowl and metal whisk into the freezer for 10 to 15 minutes. When you are ready, pour cold cream in cold mixing bowl. You can also put ice cubes underneath mixing bowl which will help in speed up the process. Whip until it starts to thicken then add icing sugar. Continue to whip until it forms a soft peak. ( I used Vitamix so I put jar in the fridge for half hour before I started. Poured cooled whipping cream in Vitamix jar, covered the lid, quickly increased speed variable from 1 to 10, in less than 1 minute cream started to thicken. Then I added icing sugar and cardamom powder. Again start variable speed 1 to 10 and then to high. You will hear motor sound change, that’s when you know it’s done. It took less than 2 minutes). You can prepare this ahead of time and put in the fridge. It stayed firm in fridge for 2 – 3 days.
2. Remove skin and cut all fruits in bite size pieces. If you are cutting fruits few hours before serving, add some lemon juice and mix well. It will stop fruits from browning. Also add little chat masala and chopped mint leaves. Cover it with plastic wrap or lid and keep this in fridge.
3. If kesar shrikhand is very dense then add little milk and make it slightly soft. TIP: If you don’t have shrikhand, you can use store bought sweet yogurt of your choice and use it. You can also enhance the flavour of yogurt by adding cardamom power and/or saffron.
4. Just before serving, fill half glass (you can use wine glass) with spicy fruits. Add 2 tbsp of kesar shrikhand. Top will big dollop of whipped cream. Add rose crystals or chopped roasted almonds/walnuts. Add wafer stick to each glass. Serve this dessert immediately. Anyway, no one will wait after they see this delicious dessert 😉😃
I am sure your family or guest will not be able to resist the temptation if you will give them sneak peek of the dessert before the dinner. This dissert is not very sweet and little chat masala balances out the sweetness. Also fresh mint adds freshness. Little cardamom goes long way and shouts Indian… haha.
