My yard was blooming with red roses few weeks back. I did not want roses to go to waste when they fell off. So I waited few days and let them bloom completely, then I cut the roses and made this. In India, there is a mouth freshener called gulkand, which is prepared using pink roses and it’s slightly soft. Gulkand is also used in sweets, ice cream, etc. I wanted to make something similar but wanted to have longer shelf life. This candied rose tastes awesome. You can add it dessert, you can use it as a garnish to the dessert or just eat as a candy or mouth freshener and it leaves nice flavour and taste in your mouth.
Preparation Time: 15 minutes
Cooking Time: 6-8 minutes
Ingredients:
2 cups clean fresh rose petals
3/4 cup sugar
1 tbsp fennel seeds
Small pinch of cardamom powder
1 tbsp honey
Procedure:
1. Properly clean and then wash rose petals with enough water. I used pink and some orange roses. Drain it and spread it on a cotton cloth to dry. Let it dry completely inside house under fan for an hour or so.
2. Mix all the ingredients (except honey and cardamom powder) with hands. Keep it on side for around 30 minutes.
3. In a non stick pan, add this mixture and cook on low heat stirring continuous. Cook until sugar melts and slightly hardens (6-8 mins). Turn off the heat and move the pan away. Then add 1 tbsp honey and cardamom powder, mix well. Honey will add shine/glossiness to this mixture. Keep on side to cool down.
4. Fill in the clean dry bottle and store it at room temperature. If you are making it soft then store in fridge. Next time when you eat any ice cream, sprinkle some on top. It can be used as an after meal mouth freshener.
Candied rose petals have wonderful flavours of rose, earthiness of fennel and most aromatic flavour of cardamom. Absolutely delicious! So next time you end up with roses, do try this. I am sure you will fall in love!
