Have you ever tried making tortilla at home? I always thought about it and when I saw Corn masa flour on sale, I bought the bag. Recently I tried making tortilla at home and instantly I fell in love! They were super soft and so fresh. Super easy to make. It is faster to make tortilla at home than go and buy from store. I always find store bought tortillas very dry *not a fan*. You can make the size you need for the recipe like Quesadilla, Burrito, Taco or Enchiladas. I am super excited to make crunch wrap supreme using my homemade tortilla. Once you prepare this at home, I am sure you are never going back to store bought 😀
Did I mentioned that you need only one ingredient to prepare these tortillas? Masa corn flour is is prepared using corn treated with hydrated lime. This flour is gluten free. This recipe makes around 10 small tortilla.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
1 cup instant corn masa flour
1 cup warm water
Ghee/clarified butter (optional)
Procedure
1. To make dough, in a wide bottom bowl, add 1 cup flour. I used 1 cup warm water to make the dough but don’t pour whole cup of water at the same time, add it gradually while mixing the flour and preparing dough. You don’t need very hard or very soft dough. It needs to be semi soft and can roll easily without cracking the borders. Cover the bowl and let the dough rest for 10-15 minutes.
2. When you are ready to prepare tortilla, kneed the dough one more time and if it feels hard then sprinkle some water and kneed it properly. Prepare small ball of dough. Flour the flat surface. Using rolling pins, roll tortilla carefully. You can roll it thin or think as you desire. I was able to roll thin tortilla.
3. When you start rolling your first tortilla, heat a cast iron pan on medium to high heat. When pan is hot, slowly lay tortilla on pan. Cook on one side. When you see it slightly puffs, flip it and cook on second side. When 2nd side is slightly cooked, flip and put directly on stove top. Since I am using glass top stove, I use cake rack to roast tortilla but if you have gas stove, you can roast directly. Tortilla will puff up, you have to slightly push with tong or spatula to help it puff. It will take less than 2 minutes to do the whole thing for one tortilla. Once done, start piling and wrap in clean cloth. I also added ghee on top to keep it moist.
4. Use these tortillas to make soft tacos, enchiladas, quesadilla or any Mexican dishes where you need tortilla. You can also cut these in triangles and fry it to make corn chips for Nachos. You need to give this a try!
