This simple and refreshing crunchy salad has all the flavours of Mexico. It is ready in no time and taste is amazing. I put together this salad in less than 5 minutes as I had frozen corn. I also had leftover black beans and store bought salsa.

Preparation Time: 15 minutes
Ingredients:
2 cups frozen or fresh corn
1 cup boiled black beans
Spicy Mexican Tomato Salsa
1/2 tsp Cumin powder
Lemon juice
Salt to taste
Cilantro chopped
Pickled radish chopped or pickle jalapeno (optional)
few tortilla chips
Procedure:
1. If you are using canned beans, rinse it properly. If you are using dried beans, then soak it for 4-5 hours and cook it until slightly soft but still has some bite to it.
2. You can prepare salsa at home if you don’t have store bought.
3. I am using ready made tortilla chips. If you like to prepare it at home then you can prepare fresh tortilla, cut in triangle and fry them.
4. In a non stick pan, roast frozen corn in butter for 2-3 minutes, add cumin, salt and lemon juice.
5. In a mixing bowl, add roasted corn, boiled beans, salsa, cumin powder, lemon juice, chopped cilantro and pickled radish or jalapeno. Mix it well. Adjust the salt and lemon juice as per your taste. Just before serving, add few crushed tortilla chips. Garnish with cilantro and tortilla chips and serve.
This salad is so refreshing. Taco chips adds nice crunch, cumin and lemon adds lot of flavour. Definitely worth trying!
