This recipe is for my younger sister Manisha who was looking for a recipe of nachos.
Sometimes during the weekend, my son and I feel like eating something yummy without putting too much effort. Just throw in a few ingredients, bake it for 5 minutes…..and voila, it’s ready to eat. It is also a perfect appetizer for a small gathering. I make salsa at home sometimes, but most of the time, I keep ready-made salsa bottle in my house. I used ready-made Tostitos tortilla chips which are gluten-free. Instead, you can make roti/tortilla with corn or plain/maida flour, cut in triangle shape and deep fry or roast on the pan until they are crisp.
Preparation Time: 5 minutes
Cooking Time: 5-7 minutes
Pickled jalapeno slices
Black/Green olives slices
Green pepper finely chopped
Black beans boiled
Mozzarella cheese grated
Sour cream or Greek yogurt
1. In a non stick oven proof tray, spread half tortilla chips, olives, picked jalapeno slices, boiled beans and cheese. Repeat the second layer.
2. Bake in the hot oven at 350 F for 5 minutes or until cheese starts to melt.
3. Serve when it is warm with salsa and sour cream, Greek yogurt and guacamole on the side. You can add different toppings like kidney beans, finely chopped onion, colour bell pepper, use different types of corn chips. This is perfect as an afternoon snacks or for a gathering with close friends, wine and good conversation.
It is completely up to you how much cheese, picked jalapeno or olives you like on your nachos.
