Quesadilla

Hello Friends,

Very healthy and tasty Mexican dish for all ages. It is crowd pleasure, you can keep everything ready and guest/family can help themselves.

Preparation Time: 45 minutes

Cooking Time: 15 minutes

Ingredients:

Bean paste
Red kidney beans – 1/2 cup
Black beans – 1/2 cup
Salt to taste
Onion – half
Taco seasoning – 1 tbsp
Oil for cooking

Other Ingredients
Tortilla
Grated cheese
Chopped Lettuce
Chopped red pepper
Chopped green pepper

Topping
Guacamole
Tomato Salsa
Sour cream (optional)

Procedure

1. Soak the beans in water for 5-6 hours and then pressure cook with salt. Mash the cooked beans to almost smooth paste.

2. In a pan heat 1 tablespoon oil, add chopped onion and when onion are translucent, add bean paste and taco seasoning. Adjust the salt and cook on low for 4-5 minutes. You can add half cup water if the consistency is too thick.

3. Heat the non-stick pan. Put one tortilla in pan, spread bean paste, vegetables and grated cheese on half of the tortilla and fold it. Press lightly and roast the tortilla until it is lightly brown on both sides.

4. Serve the high protein quesadilla in a plate, garnish with guacamole, salsa and sour cream and enjoy when it is hot.
