Naked Burrito

This is a very healthy and tasty Mexican burrito in a bowl which you will find in most Mexican restaurant. If you are gluten intolerance and cannot find corn tortilla, this a perfect replacement. It has everything as in burrito but without tortilla. If you decide to throw Mexican theme party then this is a crowd pleaser. You can keep everything ready and guest/family can help themselves.

Preparation Time: 30 minutes

Cooking Time: 20 minutes

Ingredients:

Bean paste
Red kidney beans – 1/2 cup
Black (turtle) beans – 1/2 cup
Salt to taste
Taco seasoning – 2 tsp

Other Ingredients
Tortilla chips
Salsa
Coleslaw or lettuce
Avocado
Red pepper
Unripe mango
Tomato
Cilantro/coriander
Pickled jalapeno

Procedure

1. Soak the beans in water for 5-6 hours and then pressure cook with salt. Mash the cooked beans with spatula. Then add 2 tsp taco seasoning and mix well.

2. Finely chop all veggies like red pepper, avocado, mango, tomato and cilantro. I am using store bought coleslaw mix but you can add chopped lettuce.

3. In bowl, first add tortilla chips, bean paste, all chopped veggies, pickled jalapeno and salsa.

4. Serve this immediately. Enjoy this bowl full of goodness.

You can also add sour cream and cheese on top. You can add brown rice seasoned with taco seasoning. You can add pineapple, spring onion, different types beans, guacamole. There are endless options. You can also personalize for each person.
