Guacamole is a must to have in any Mexican dish. It is very easy to make. It is very nutritious as avocado has good cholesterol.
Preparation Time: 15 minutes
Cooking Time: 5 minutes
Ingredients:
Pablano or Green pepper – 1
Avocado – 1
Grated Garlic – 3 cloves
Cumin powder – 1/2 tsp
Lemon juice – 2 tbsp
Salt to taste
Procedure
1. Roast pablano pepper on direct stove until skin from all sides are dark brown (3-4 minutes). Remove from the stove and leave in a bowl covered with lid for 5-7 minutes so skin will pill off easily. Now remove the skin and finely chop the roasted pepper.
2. In a bowl mix all the ingredients including chopped roast pepper and mix well. Add enough lemon juice so avocado do not turn brown. You can also add finely chopped onion if you like.
3. Garnish with coriander. Serve this spicy, tangy guacamole with burrito bowl, quesadilla, nachos or burritos. Tip: Keep avocado pit (seed) in the this bowl, it will keep guacamole from turning brown.
