Khaman Kakdi – Farali Salad

This is farali salad prepared using cucumber and roasted crushed peanuts. My mom used to prepare this during Hindu fasting when we eat only special kind of food. This is a side dish and super refreshing and tasty. You can prepare this in 5-6 minutes. so next time when you have cucumber at home, do try this recipe.

Preparation Time: 5-6 minutes

Ingredients:

1 seedless cucumber chopped in small pieces
1/2 cup roasted, skinned and slightly crushed peanuts
Salt to taste
Sugar (optional)
Lemon juice
Cilantro/coriander leaves chopped
1 green chili finely chopped

Procedure:

1. Chop cucumber in small pieces. sprinkle some salt on it and mix. Let it rest on side for few minutes and then squeeze out all the excess water from it.

2. In a big bowl, add cucumber and all other ingredients as per your taste and mix well. Salad is ready to serve.

3. Serve this delicious farali salad with sabudana khichdi and fresh home-made yogurt on side.
