Yogurt / Curd / Dahi

How do you make yogurt at home? People ask me this question all the time! I know a lot of Indians make yogurt at home, but when we live in cold place like Canada, it is even harder for us to make the yogurt at home.

Here is how I make yogurt… I regular yogurt using 2% milk. To make shrikhand, I use full fat milk.

Stove top recipe

Ingredients:

Milk (2% or 3.25%) – 1 bowl

Plain yogurt – 1 tbsp.

Microwave recipe

1. Heat the milk in microwave for about 4 minutes or until it comes to boil

2. Let the milk cool down to luck warm or if milk is completely cooled, microwave for one minute.

3. Add the plain yogurt (you can use the store-bought) to the bowl and mix well.

4. Heat the oven for 3 minutes and turn off the heat when it reaches 100to 120F. Or turn the oven light on and place the bowl in worm place.

5. It takes about 7-8 hours to set the yogurt.

You can use this yogurt in other recipes or to make lassi.

  1. I am in US and struggling with yoghurt
    What temp do you select for 3 mins
    How long do you keep it oven?
    Keeping lights longer for 6 hours plus may consume more electricity

    Please can you guide

    1. Hi Priya, I turn on the oven at 350F. Keep it on for 2-3 mins so temparure of the oven is around 100-120F. Turn off the heat and put the bowl with boiled milk inside the oven and close the door. Don’t disturb the bowl for atleast 6-7 hours

    I tried this 3 times and and curd never was set. I boiled the milk and let it to cool down to Luke warm temperature. I am used to of making yoghurt in India but In Australia it never sets.

    Can you please help with additional tips?

    1. Hi Julie, please make sure you are using full fat milk, here in Canada we get 3.25% and 2% milk. I usually make milk with 2% which little low fat. Also, if milk is hot then it kills the bacteria. First boil milk ( it will take around 4 min in microwave), then let it completely cool down and then reheat for 1 min. Then add 1 tbsp mashed yogurt and stir properly. Keep in a warm place. If climate is cold then heat oven for 3 minutes then turn off and put the milk mixed with yogurt in oven. Hopefully this will help. Don’t give up, you will succeed in making yogurt. Don’t throw that half set yogurt, you can use that in lots of recipes. Please let me know how it works.
