Gujarati Lunch in Jiffy

Since Covid started my husband and I work from home. Food is always in our mind. I do want to eat healthy. I plan for weekday lunch as I don’t have much time to cook during my lunch break. So for this platter, I had roti dough ready, I usually prepare enough to last at least 3 meals. I prepared sambharo (cabbage stir fry) and baingan (eggplant) fry during weekend, it stays good for 2-3 days in fridge. Anyway, it takes just few minutes to prepare both cabbage stir fry and eggplant. During weekend, I also boil toor dal for 2-3 meal and add all the spices. When I want to eat Gujarati Dal, I take out 1 portion, add some water, add tempering and let it boil. It takes me less than 5 minutes to prepare dal. Since mangoes are in season, how can I miss that! Fresh turmeric helps to increase the immunity so I buy them in bulk and pickle it with salt and lemon juice. Keep it in fridge and it will stay good for at least 2 weeks.

So next time when you think you don’t have time to cook or eat healthy meal, do thick twice! As I always say, planning for your meal is everything. Good planning will help to eat healthy meal during the day. This meal has carb, veggies and protein.

Here are the recipes.

Sambharo (cabbage stir fry) – you can add veggies of your choice like broccoli, carrot, cabbage, cucumber, bell pepper, jalapeno, etc.

Baingan (eggplant) fry

Gujarati Dal

Fulka roti – 1 cup flour, 1/2 cup water and 1 tsp oil. Make a soft dough using warm water. Let it rest and then make thin fulka roti. It takes me 1 minute per roti.

Pickled turmeric – thinly slice fresh turmeric, add salt and lemon juice and mix well. You can keep this in fridge for 2 weeks.
