Alert: Super easy and super duper tasty
Do you like potatoes? Yum…I am a big fan!. I have prepared so many variation of potatoes. You may have seen my recipe for Non Fried Spicy Potato Wedges, Crispy Garlic Baby Potatoes, and Chatpate Aloo. So this time when I decided to make potato, I thought of adding Middle East/Mediterranean spices. I was using small potato. I love the flavours of zaatar and sumac. Keeping the skin helped to hold potato together. I pan fried in 2 tbsp oil. They were very crispy from outside and very soft from inside. Flavors were amazing! I would definitely prepare it again.

Preparation Time: 10 minutes
Cooking Time: 20 – 25 minutes
Ingredients:
10-12 small potatoes
Oil for cooking
Seasoning:
1 tbsp zaatar (blend of thyme, roasted sesame seeds, sumac)
1 tsp sumac powder
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp red chili flakes
Salt to taste
Procedure
1. Par boil potatoes in water for 5 minutes covering with lid. Turn off the heat and let it stay in water for sometime. Then remove from water and rinse with normal water. Cut in half and then press with both your palms when still warm. It will be like thick flat patties.
2. Heat wide bottom pan with 2-3 tbsp oil. Add smashed potato skin side down one at a time. Do not overcrowd the pan, only one layer. If all potatoes don’t fit in one pan then cook in 2 batches.
3. Cook on one side on medium heat for around 3-4 minutes until skin turns brown and crispy while keeping watch. Do not stir it. When you see they look crispy, flip them one at a time.
4. Let other side cook on medium heat for 3-4 minutes or until it is brown in colour.
5. While potatoes are cooking, mix seasoning in one bowl and keep on side.
6. Once other side gets crispier, turn off the heat and add the generous amount of spice mix and mix carefully without breaking potatoes. Adjust the spices and salt if needed.
7. Serve it when hot. These potatoes are bursting with flavours. It takes little time to cook. Prepare it for game night, afternoon snacks or enjoy while watching movie with family.
