Bean Enchiladas

I started making enchiladas just 2 weeks back and I already made it 3 times…haha. Sometime it is hard to convince my husband to try new food, but he loved this so much that I prepared it twice in same week. Mexican food resembles to Indian food in spices and flavours, that may be one of the reason we Indians love to eat Mexican food. This is a very easy Mexican dish which can be prepared in just few minutes. I used home made corn tortilla, you can definitely use store bought corn tortilla. I am using canned enchilada sauce, you will find many enchilada sauce recipe on YouTube or google. Try not to use flour tortilla as it will get soggy. This recipe serves 2 people. I am using mixed beans but you can use any single or combined beans as per availability.

Preparation Time: 15 minutes

Cooking Time:  30 minutes

Ingredients:

2 cup boiled mixed beans (red kidney beans, black turtle beans and pinto beans)
Salt to taste
1 tsp taco seasoning
6 gluten free corn tortilla
1½ cup enchilada sauce
½ grated mozzarella cheese

Procedure

1. Soak dry beans in water for 5-6 hours and then pressure cook for 4-5 whistle. Once cooker releases pressure, take out the bean. Slightly mash cooked beans and add taco seasoning and salt. Mix well and keep it on side. You can use canned beans if you decide to prepare this dish last minute.

2. Prepare corn tortilla using this recipe. Keep it on side and cover with lid so it will remain soft.

3. Grease glass tray (Pyrex) to bake enchiladas. Spread little enchilada sauce at the bottom.

4. Keep all the ingredients on counter top ready before you start assembling.

5. On a flat surface, first put 1 tortilla, then spread around 2 tbsp of enchilada sauce, 1 or more tbsp beans paste (depending on size of tortilla) and spread cheese on top. Fold it from both sides and put in glass tray.

6.  Finish assembling all tortillas and put it side by side in tray. Top it with more sauce and cheese.

7. Bake it at 350F for around 15 minutes or until tortillas are slightly crispy from the edge.

8. Serve the high protein enchiladas with salad, avocado, etc. You can also serve guacamole, and salsa on side.

I am sure you will love this easy to make and healthy dish. Use generous amount of enchilada sauce. You can keep everything ready a day before and just assemble it last minute. You can get help from your little helper. I would highly recommend you to try this one time.
