Fattoush Salad

This salad is an integral part of  Middle Eastern menu. Recently when I had friends over for dinner, I prepare this salad to go with many other Mediterranean/Middle Eastern dishes. It is so refreshing with flavours of cumin, parsley, mint and garlic.

Preparation Time: 20 minutes

Ingredients:
2 cups pita chips
4 cups romaine lettuce or mixed greens roughly chopped
1 cup curly parsley finely chopped
1/4 cup mint roughly chopped
1 small box of cherry tomato
1 cup seedless cucumber cut lengthwise and thinly sliced
1/4 red onion thinly slices
4-5 red reddish thinly slices

Dressing:
2 tbsp Extra virgin olive oil
2 cloves of garlic minced
2 tbsp Lemon juice
2 tsp sumac
Small pinch of black pepper powder
Salt as needed

Procedure:
1. To prepare pita chips, cut pita into small square. Rub the olive oil all over. Then bake these in oven at 350F for about 6-7 minutes. Once baked and cool down, store in an airtight container. This also goes well with foul mudammas, hummus, baba ganoush, etc.

2. Mix all salad ingredients (except pita chips) in a big bowl. Cover it and keep on side.

3. Prepare dressing using all the dressing ingredients. Whisk it properly and keep it on side. You can prepare this day ahead.

4. Just before serving, add dressing to the salad and mix well. Add pita chips on the tops. Serve it with falafel or any Middle Eastern food.

This salad is so refreshing. Sumac adds nice tang to the salad. The flavour of garlic, mint and parsley goes really well in this salad. A must try for your next get together!
