Who doesn’t like tacos? I love both soft and hard shell tacos. It resembles with Indian food with spices and flavours. These tacos can be a quick weeknight dinner or weekend meal. Very easy to prepare and it can be ready in 10-15 mins. I like to prepare bean paste at home but you can either use canned refried beans or just canned whole beans and finish cooking at home. I always have taco shells in my pantry. I also keep dry black beans and kidney beans at home. You can keep everything ready and everyone can assemble their own tacos. You can involve kids too.

Preparation Time: 10-15 minutes
Cooking Time: 5 minutes (depending on how you make bean paste)
Ingredients:
Bean paste
Red kidney beans – 1/3 cup
Black beans – 1/3 cup
Salt to taste
Onion – ½
Taco seasoning – 1 tbsp
Oil for cooking
Other Ingredients
7-8 taco shells
Lettuce chopped
Colour bell pepper & jalapeno chopped
Fresh/frozen corn roasted
Cheese grated
Spicy tomato salsa
Procedure
1. If you are using dried beans then soak the beans in water for 5-6 hours and then pressure cook with salt. Mash the cooked beans to almost smooth paste. You can use one can of refried beans. You can also use canned beans and move on to next step.
2. In a pan heat 1 tablespoon oil, add finely chopped onion and when onion are translucent, add bean paste and taco seasoning. Adjust the salt and cook on low for 4-5 minutes. You can sprinkle slight water if the consistency is too thick.
3. Bake tacos in oven for 2-3 minutes to make it crunchy. Roast fresh or frozen corn in a pan with some butter.
4. Take one taco shell, add 1 tbsp bean paste, then add chopped lettuce, pepper, roasted corn and cheese. Top it with salsa and serve immediately. You can also add sour cream, guacamole on top.
