I was having a lazy weeknight last week and with very limited items in my fridge, I decided to go through a recipe book that I have, called “Vegetarian”, looking for ideas on what to make. While browsing, I came across this recipe for “Spinach Cheese Parcels”. It required very few ingredients, all of which I had at home at the time! I decided to try it, adding a few modifications of my own! So without further ado, here’s the recipe:
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
Dough
All purpose flour – 2 cups
Salt to taste
Warm water
Stuffing
¼ cup (60ml) vegetable oil
1 onion, finely chopped
1lb (450 gm) spinach, washed and chopped
200 gm feta, crumbled
½ cup chopped parsley or cilantro
Salt and black pepper
Procedure
1. Combine flour with a pinch of salt in a mixing bowl. Add warm water gradually to form a soft dough. Kneed until dough is elastic and smooth.
2. In a pan, heat 1 tablespoon oil on medium heat. Saute onion for 3 minutes, until soft. Remove onion and set aside. Cook spinach in the same pan for 2 minutes, until wilted. Combine onion, spinach, feta, and parsley (or cilantro) in a mixing bowl. Add salt and black pepper and allow to cool.
3. Roll out each piece into 10 inch round. Add spinach filling and fold each one in half. Fold in edges to form a rectangle, pinching them to seal. If using a stove, lightly oil a flat pan. Transfer the parcels to it and cook for a few minutes on each side, until golden and crisp. This can also be done on a grill using the same technique.
4. Cut in half and enjoy when it is warm.
