This is the BEST garam masala you will ever try! You just need a small pinch to enhance the flavour of any sabji whether it’s veg or non-veg.
I don’t think you will find any kitchen in India without garam masala. And everyone makes it with slight variations. There are tones of different brands selling ready-made garam masala. Even though it is super easy to make, literally 5 mins, people still buy it from the store. I used to do that long time back but since I started making at home, I feel like there is no comparison to homemade garam masala. This spice blend has strong flavour and will last you for months.
I love to try different types of masala (seasoning) at home. You may have seen many home made spice blends like pav bhaji masala, taco seasoning, Indian chai/tea masala, kolhapuri masala, dhania jeera powder on my website. Ingredients are easy to find. Here is how you can prepare.

Ingredients:
3-4 star anise (chakr phool)
20 cardamom pods (elaichi)
30 cloves (lavang)
2 black cardamom (kali elaichi)
2 tbsp coriander seeds (dhania)
1 tbsp cumin seeds (jeera)
1 tbsp black pepper corns (kalimirch)
2 inch cinnamon stick (dalchini)
2-3 mace (javitri)
5-6 bay leaves (tejpata)
2 tbsp dry fenugreek leaves (kasuri methi)
Procedure:
To make garam masala, add all ingredients except kasuri methi in dry pan to roast. Roast on low to medium heat stirring continues. In 2-3 minutes, when spices are slightly roasted and you can smell the flavours spices, turn off the heat. Move the pan away from hot burner. Then add kasuri methi and stir. Heat in the spices will help roasting kasuri methi. Let roasted spices cool down completely to the room temperature and then grind all the spices in grinder to a fine powder.
Store this garam masala in clean, dry airtight container. You can store this in cool dry place for up to 6 months.
You can add this spice blend (seasoning) to any curry to enhance the flavour. Little masala goes long way, so use as little as needed.
