OMG…best shrikhand ever! Also easiest! My friend makes really good shrikhand. So this time I decided to try her recipe with my twist. Since there are plenty of mangoes in the market, I tried making mango shrikhand. Shrikhand is an Indian dessert prepared using pressed yogurt and we make it around the year. Shrikhand can be prepared with different flavours like mango, kesar (saffron), elaichi (cardamom), nuts etc. You may have seen my recipe for Kesar shrikhand which I prepared sometime back using the traditional recipe. My family came from India during my son’s wedding and they absolutely loved kesar shrikhand.
This recipe is different version since I have access to all these ingredients. It is very easy and need only 4 ingredients, yup…that’s correct. It takes very little time as I am using store bought yogurt or you can prepare yogurt at home using full fat milk. I also used condensed milk instead of sugar which was easy to blend and shrikhand won’t be watery.

Preparation Time: Around 20-25 minutes
Cooking Time: 0 minutes
Ingredients:
1.5 litre full fat yogurt (I used 2 container of 750ml each)
Puree of 2 mangoes
500ml sour cream
300 ml or more sweetened condensed milk
Procedure:
1. You need to squeeze out water from the yogurt using cheese cloth. I put cheese cloth on strainer and emptied both container of yogurt and let all the water drain, it took about 1 and 1/2 hour. When yogurt was almost drained, put thick layer of news paper on the counter, top with paper towel and put the cheese cloth with strained yogurt on it. Let it stand for another 30 minutes. Layer of paper absorbed all the access water from the yogurt. You can also use store bought pressed yogurt.
2. Add strained yogurt in stand mixer or a big mixing bowl. I am using kitchenaid stand mixer. Also add sweetened condensed milk, mango puree, and sour cream. Whisk properly with spatula or mix it for around 2 minutes in stand mixer and you are done. You can add more condensed milk if you like more sweetness.
3. Chill in the refrigerator until ready to serve. When you are ready to serve, garnish with fresh mango pieces or nuts.. This is make ahead dessert so you can prepare day or 2 in advance. Also this freezes well for few months.
We serve this with puri or roti, kadhi and vegetable on side. Try this dessert once and you will be hooked forever 😀 😀
