This is quick and easy sandwich for breakfast or anytime of the day when hunger strikes last-minute and can’t wait 😀 😡 . This happens a lot in my house lately..haha. From I don’t want to eat breakfast because I am not hungry to mom…need to eat something right now…lol. I think many of you relate to this 🙂 .
I always have bread in my pantry. I like to buy different kind of bread every week so my family doesn’t get tired of eating same type. It also gives me chance to prepare something different using bread like baguette, ciabatta, focaccia or any sandwich bread. There are so many varieties of bread available in the store but my personal best is sour dough bread with cilantro and black olives. One of the small bakery in Toronto prepares it using organic ingredients and this bread is so chewy …yum 😛 😛
This sandwich can be prepared using any of the above mentioned bread but I have used sandwich bread. I am using avocado which has a good fat. If you keep veggies ready then young children can assemble it themselves too.
Preparation Time: 5 minutes
Cooking Time: 2-3 minutes
Ingredients:
2 slices of multigrain or whole wheat bread
Mozzarella cheese slice
1 ripe avocado
Tomato slices
Salt to taste
Procedure:
Toast the bread slices in the toaster. Once toasted, lay both slices on flat surface. Remove pulp from avocado and spread on one slide. Put mozzarella slice, tomato slice and pinch of salt on the other slice. Cover the slice with the one with avocado spread. Slice from the middle of the bread and serve.
You can also add green chutney to make it spicy. Use gluten free bread if you are on GF diet. You can avoid cheese if want to eat vegan. Customize it as you wish. You can also add sliced cucumber, lettuce, beet, etc. These are easy to carry for the lunch too.
