Today, I’m going to share with you a recipe that I have been preparing for many years and it is my absolute favourite. Green Beans (French beans) cooked with coconut tastes amazing. Green colour makes it looks beautiful. I am using southern Indian style flavour. It’s nutritious, colourful, and perfect for lunch or dinner! This recipe serves 3 people.
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ingredients:
300 gm green beans (French beans) cut in small pieces
1/2 cup fresh or dry shredded coconut
2-3 green chilies chopped
6-7 curry leaves
pinch of sugar
2 tsp coriander powder
1 tsp cumin seeds
1 tbsp lemon juice
Salt to taste
Oil for cooking
Chopped coriander/cilantro for garnishing
Procedure
1. In a large pan, heat oil on medium heat. Add cumin seeds to the oil. When the seeds start to pop, add green chilies and curry leaves saute for a minute. Add chopped green beans. Add salt and a pinch of sugar immediately and stir well. Sugar will brighten and retain green colour of beans. TIP: When you cook green beans, add pinch of sugar and you will see the green colour brightens immediately.
2. Continue cooking covered with the lid and stirring occasionally. Beans will be slightly soft in 4-5 minutes, add shredded/grated fresh/dry coconut, coriander powder, lemon juice and mix well. You can also add 1/2 tsp of sugar if you like little sweetness.
3. Garnish with fresh coriander and grated coconut. Enjoy this dish with roti or paratha. This easy, mouth-watering recipe is a must-try!

I made a slight change I used canned coconut cream instead of grated coconut …..I did not have any on hand 😦 The green beans were delicious…
