Crispy Karela (Bitter Melon) in Air Fryer

Do you like karela (bitter guard/melon) but don’t know how to cook? Does it takes too long to make crispy karela (chips) in a pan? You have come to the right place.

Bitter guard has many health benefits. It has a high amount of antioxidants and can help reduce blood sugar. Regular consumption of bitter gourd leads to improvement in skin, hair and cancer problems.

I personally love karela sabji two ways. I make kaju (cashew) karela which is soft and sweet. It goes well with mango raas. I also make crispy spicy karela sabji which my son’s favourite. It takes long to make karela crispy in the pan and need more oil. Since I bought air fryer, I started using it to make karela crispy. It turns out like bitter guard chips which you find it in a store without using oil.

It takes little time and you don’t have to pay much attention while cooking. To make this sabji you need bitter guard, 2 tsp oil and regular spices. It’s ready in less than 20 mins. You can store this for couple days and snack like chips. They are very crunchy and super delicious.

Preparation Time: 10 minutes

Cooking Time: 18-20 minutes

Ingredients:
5 karela sliced thinly
1/2 tsp chili powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
Salt to taste
2 tsp oil

Procedure: 
1. Wash and dry karela. Slice them thinly. Sprinkle little salt and let it rest for 15-20 minutes.

2. Set air fryer on air fry mode at 400F for 20 minutes.

3. Preheat air fryer. Once it heated, spread karela slices in crisper tray. If karela feels too wet then squeeze out water or damp it with paper towel to remove excess water.

4. Let it cook in air fryer. After 10 minutes, just shake the tray so karela don’t burn from one side. After than, check every 2-3 minutes to see if it’s done. Mine took around 17 minutes. If you want to make chips then let it air fry for 2-3 minutes more while making sure they don’t burn.

5. Once ready, remove these chips in a big bowl.

6. Then add 2 tsp oil, little salt (as needed), spices and mix well with clean hands. If you are making chips then you can skip spices or add according to your choice.

7. This crispy and crunchy karela sabji is ready serve. I served it with roti, Gujarati sweet sour daal, cauliflower sabji, mango slices and grapes pickle.
