Restaurant Style Tamatar Ka Shorba or Tomato Soup

Dear foodies,

Tamatar ka shorba mean tomato soup. This soup is made with tomato, onion and garlic. It is super easy to make and the ingredients are easily available in our kitchen. When we used to go the restaurant in India, we always ordered one of these 2 soups munchow soup or tomato soup as a starter. We absolutely loved both  😎 😎 !!  Here in Canada, I don’t get the similar tomato soup so I try to make it when tomatoes are in season and weather is cool (which happens 8 out of 12 months). Hot soup on cold days gives the best feeling. I also like to drink this soup with light supper and with Pulao. My husband loves and craves for this soup many times, so I try to make it as often as I can. This is gluten-free and guilt free recipe.

This soup serves 2-3 people.

Preparation Time: 5 minutes

Cooking Time: 15-20 minutes

Ingredients:
4-5 big ripe tomato
1 small onion
3 cloves of garlic
1 small potato
1 tbsp oil
1 tsp cumin seeds
Salt to taste
1-2 tbsp tomato ketchup
Pinch of black pepper powder
Mint and sweet basil (optional)

Procedure

1. Cut big chunks of tomato, onion, garlic cloves (without skin) and potato in a pot, add some water and pressure cook for 2 whistle. Boiling onion and garlic helps to get rid of raw smell.

2. Blend boiled tomato, onion, garlic and potato into smooth puree. Pass through the sieve if you see tomato skin or seeds.

3. In a pan, heat 1 tbsp oil or ghee, add cumin seeds. When seeds stars to pop, then add puree tomato onion mixture, some water to adjust soup consistency, salt, black pepper powder and tomato ketchup to your taste. If you like some flavours then add few chopped mint and sweet basil. Simmer on low for 5-7 mins stirring frequently.

4. Serve when hot. Add some butter before serving. This is perfect starter to any meal of the day. You can prepare it in advance and heat before you serve.

This soup tastes the best when it is hot. The cumin and black pepper adds wonderful flavour. Onion and garlic flavour are subtle. You can add bread croutons while serving the soup. Avoid butter for vegan version. I also serve this soup with pulao. I am sure this will be your next go to soup.
