Sharing this wonderful, easy sweet/dessert recipe ((Tapioca/Sago Pudding) which can also be eaten during Hindu fasting. We also call it sabudana ni kanji. It is a healthy sweet which is loved by young and old. We do prepare this for young kids too. It is very easy recipe which can be prepared in less than 30 minutes. You just need to soak sabudana (sago/tapioca) ahead for around 3 hrs. This tastes similar to rice pudding but instead of rice, I am using tapioka (sabudana) which are allowed in Hindu fasting food.
Preparation Time: 5 minutes
Cooking Time: 15-20 minutes
Ingredients:
1/4 cup sabudana
2 cup milk
2 tbsp sugar (use more or less depending on your taste)
Few chopped nuts
Few strings of saffron soaked in 2 tbsp milk (optional)
Pinch of cardamom powder
Procedure
1. Wash sago/sabudana with water until water is clear. Soak in water (little more water so even after sabudana are soaked there is little water on top) for 3-4 hours.
2. When you are ready to prepare kheer, add 1/2 cup water to soaked sabudana mixture if it looks dry. Cook sabudana in water on low to medium until it turned translucent (it will be soft if you press with fingers). Then add around 2 cups milk. Cook on low to medium heat stirring frequently until kheer becomes thick and sago is cooked completely. Make sure to stir frequently as milk and sago can burn at the base. Then add sugar, saffron milk (optional) and cook until sugar is completely dissolve. Turn off the heat and add cardamom powder and nuts of your choice.
3. Serve warm with rajgira paratha and farali aloo sabji. This kheer is busting with cardamom flavour and it’s very creamy. A must try this easy recipe!
