Non Fried Peas Potato Patties

Who doesn’t like tasty fried food? How about fried food prepared without frying? As much as I love fried food, I always looks for the ways where I can cook fried food without frying.  Recently I was craving for patties, but most of the time it is deep fried in the oil. I was thinking how can I avoid deep frying that’s when my appam pan came to rescue. I absolutely love appam/appe pan. You may see my below recipes which I have prepared using appam pan.

I wanted to add the peas to this recipe but I didn’t have enough in the freezer so I end up adding green peas, pigeon peas and edamame beans. You can use just green peas or mix of fresh beans. The result was super delicious patties!!

Preparation time: 30 minutes

Cooking Time: 20 minutes

Ingredients:
2 cup mix green beans/peas (green peas, pigeon peas and edamame beans) coarsely chopped using chopper
4 medium potatoes boiled and mashed
2 green chilies finely chopped
Small piece of ginger grated
1/2 cup grated fresh or dry coconut
2 tbsp lemon juice
1/2 tsp cumin seeds
1/2 cup chopped coriander leaves
1/2 tsp sugar
Salt to taste
2 tbsp arrow rot powder or corn starch
Oil for cooking

Procedure

1. Pressure cook potato or boil until it is soft from inside. Remove potato skin and In a big bowl, mash  it with masher.

2. Coarsely chop green beans/peas using chopper.

3. In a pan, heat 1 tbsp oil. Add cumin seeds. In few seconds, cumin starts to turn brown, add chopped green peas/beans. Also add salt, sugar (optional but it helps to retain green colour), chopped chili, grated ginger. Cook on low to medium heat stirring frequently. When peas are slightly cooked (5-7 mins) add coconut and lemon juice and cook for 1 more minute and turn of gas. If you wish, you can also add dry raisins, chopped cashews at this time.

4. Mix green mixture with mashed potato, add coriander leaves. Adjust salt and lemon juice at this point. Make desired size balls. I made balls which can fit in appam holes. If you are planning to deep fry then you can make slightly bigger or smaller balls.

5. In a small bowl, mix arrow root flour with water and pinch of salt. The mixer will be slightly thin but not completely runny.

6. When you are ready to make patties, heat appam pan. Grease each hole with 2-3 drops of oil. When pan is hot, turn down the heat to medium. Dip each balls in arrow root batter, then drop one ball in each hole. You can add 1-2 drops of oil once while you are flipping the balls in pan. Cook from all sides until it’s brown. Remove from the pan when done. You can instead deep fry these patties in hot oil.

7. Serve hot patties with dry garlic chutney and coriander chutney.  I am sure you will absolutely love these healthy patties.
