Sandwiches are one of the most famous street food in India. It is available at every street corner. It is a quick and easy snack. It is so wonderful to have grilled sandwich with vegetables and melted cheese…yum! I try to make it during weekend for light supper especially when we have heavy lunch and want to eat something light but fresh and warm. This recipe serves 4 people.
Preparation Time: 15 minutes
Cooking Time: 30 minutes
4-5 boiled and mashed potato
1 carrot grated
1/2 cup coriander leaves chopped
1 tbsp lemon juice
1 tsp cumin powder
2-3 chopped green chilies
Salt to taste
Sandwich bread slices
Butter at room temperature
1. In a big mixing bowl, mix together boiled and mashed potato, grated carrot, chopped coriander leaves, lemon juice, cumin seeds, chopped green chilies and salt. Mix everything well together.
2. Take 2 pieces of sandwich bread (You can use whole wheat, white or multi-grain bread slices). Apply the mixture on one slice . Put the cheese slice on it and cover with second bread. On top spread some butter which will help to crisp the outside. Cook on hot grill until you see the golden mark on both sides of bread and cheese is melted. I am using grill but if you don’t have it, you can use thick bottom pan. When you are cooking on the pan, apply some pressure on the top of sandwich and cook until both sides are golden brown and cheese is melted.
4. Grilled sandwich is ready. Serve hot with tomato ketchup or green chutney on the side.
You can also add thinly slice tomato, thinly slice onion before adding cheese and grill it.
