Quinoa Salad

Dear Foodies

Many of you already know Quinoa is very high in protein and fiber. It is called world’s healthiest or super food. Quinoa doesn’t have any taste of its own, so there are endless opportunity how you dress it.

Preparation Time: 5 minutes

Cooking Time: 20 minutes

Ingredients:

1/2 cup uncooked quinoa
1 cup water
1/4 cup fresh/frozen soy beans
Few fresh grapes
Few Black berries
Small piece of cucumber
Salt
Lemon juice

Procedure

1. Bring 1/2 cup quinoa and 1 cup liquid to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. While quinoa is cooking add frozen or fresh soy bean with quinoa, so it cooks with it. When ready, remove from the heat and fluff quinoa with a fork.

2. Cut grapes, berries and cucumber.

3. When quinoa cools down slightly, add chopped fruits and vegetable. Add lemon juice and salt and mix well.

4. Quinoa salad is now ready. Eat this healthy salad just by itself or serve as a side.

  1. Yum! Quinoa salads are wonderful and this one looks delicious. We’ve never had one with grapes or blackberries though. As it’s on the cusp of salad season here, you’ve definitely given us something to think about! Thanks for sharing. 🙂
