My family loves Chinese food so I cook it very frequently. This dish is one of those which we never get tired of :). Any time I have few of these vegetables in my fridge, I prepare Vegetable Manchurian. It goes well with plain or vegetable fried rice. No matter how much I prepare, we never have leftover :P. This way I feed plenty of vegetables to my family. This recipe serves 3 people.
Preparation time: 20 minutes
Cooking Time: 15 minutes
Ingredients:
1 carrot sliced
10-12 mushrooms sliced
2 onion sliced
15-20 sugar snap peas
2 Bell pepper of any colour cut in cubes
Small piece of ginger thinly slices
5-6 cloves of garlic thinly sliced
Salt to taste
Oil for cooking
For Sauce
2 tbsp Soy sauce
3 tbsp corn starch
Few drops of hot sauce or sriracha sauce
1/4 tsp black pepper powder
1 1/2 cup water
Procedure
1. Prepare all the vegetable as shown in the picture below.
2. In a small bowl, mix all sauce ingredients.
3. Heat 2 tbsp oil in a pan. Add carrot, mushroom and onion pieces. Saute for 3-4 minutes. Then add sugar snap peas, bell pepper, slices ginger and garlic and salt. Cook on medium 2-3 minutes stirring every few seconds. When vegetables are slightly cooked, add sauce and mix well. Cook on low and stir continuously. If sauce dries out then add little water at a time. Cook on low for 4-5 minutes covering the lid. The sauce will be sticky and thick.
3. Serve it immediately on the bed of rice. Enjoy this delicious Vegetable Manchurian with steam rice or vegetable fried rice, choice is yours! You can also add french beans, broccoli or any vegetables you like.
This dish tastes amazing anytime of the year but especially in the winter. Ginger and garlic adds lot of flavour to this dish!!
