Hello Fellow Chefs,
This recipe is so simple yet very delicious. I am using beets and carrots to make this side dish which can be use as condiment with many dishes. We ate it with our main food as a side. It’s nutritious, colourful, and perfect with lunch or dinner!
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Ingredients:
2 carrots grated
1 beet root grated
2-3 green chilies slice thinly
1/3 cup peanuts roasted and chopped
1 tsp cumin seeds
1 tbsp lemon juice
Salt to taste
Oil for cooking
Chopped coriander/cilantro for garnishing
Procedure
1. Grate carrots and beets. Thinly slice green chilies. Dry roast peanuts, remove skin and crush slightly.
2. In a pan, heat oil on medium heat. Add cumin seeds to the oil. When the seeds start to pop, add green chilies and saute for a minute. Add grated carrot and beat, salt and mix well. Cook for 2-3 minutes. Add lemon juice, crushed peanuts and mix well. Keep few chopped peanuts for garnishing.
3. When ready, transfer to clean bowl. Garnish with fresh coriander leaves and chopped peanuts. Enjoy this dish as a side with any main dish. This easy, mouth-watering recipe is a must-try!
