Weekend breakfast and if you are eating gluten-free what are the choices you have? One of my favourite breakfast is pancakes. Since I started eating gluten-free, I was thinking of making it gluten-free. I had ripe banana in my house and I also keep buckwheat floor (it’s not wheat). So this pancakes took birth :). It is very easy to make, ready in few minutes. It is eggless, vegetarian and gluten-free. This recipe makes 4-5 pancakes.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Ingredients:
1/2 cup buckwheat flour or 1/2 cup wheat flour if no gluten intolerance
1 ripe banana
Pinch of salt
1 tsp sesame seeds
Little milk
Oil for cooking
Maple syrup
Procedure
1. In a mixing bowl, mash ripe banana. In the same bowl, add buckwheat flour, small pinch of salt, sesame seeds and 2 tsp oil. Mix well. Now add little milk at a time to make a thick batter.
2. Heat the non stick or flat pan and grease it with oil. When pan is hot, add big spoonful of batter and slightly spread it. When lower side is cooked and golden, add few drops of oil on top and flip it. It is ready when both sides are cooked properly, it will take 1-2 minutes.
3. Serve these healthy, nutritious Buckwheat Banana pancakes with maple syrup or just spread peanut butter and you are good to go. These pancakes are so light, tasty and most of all it is very healthy. I am sure your picky eaters will enjoy it too :). Serve when it warm.

excellent rceipe i made n gave v to my grand daughters they b bloved so easy to cook eggless is the v best part of it thanks for sharing waiting for more
