Potato Patties with Yellow Peas Gravy / Ragda Patties

Dear Friends,

This is a street food of India. It is sweet, spicy and tangy dish available in roadside food carts and in restaurants. This recipe serves 4-5 people.

Preparation time: 30 minutes

Cooking Time: 30 minutes

Ingredients:

Patties
Boiled Potatoes – 4-5
Carrot – 1
Frozen/Fresh green peas – 1/2 cup
Frozen/Fresh Corn kernels – 1/2 cup
Green chili ginger paste – 1-2 tbsp
Cumin seeds – 1 tsp
Salt to taste
Oil for cooking

Ragda/Yellow peas gravy 
Dry yellow peas – 1 1/2 cups
Turmeric powder – 1 tsp
Red chili powder – 1 tsp
Cumin seeds – 1 tsp
Mustered seeds – 1 tsp
Asafoetida – 1 pinch
Salt to taste
Oil for cooking

Toppings
Finely chipped onion
Finely chopped tomato
Green chutney
Date tamarind chutney
Chopped coriander leaves

Procedure

1. Grate Carrots. In a pan heat 2 tbsp of oil, add cumin seeds, saute for a minute and add grated carrot, green peas and corn kernels. Add salt and cook for 4-5 minutes or until peas and corn still has some bite in it. Mash the boiled potato, add cooked vegetable mixture, salt, cumin seeds  and chili ginger paste. Mix potato with vegetable mixture thoroughly. Make patties about 2 inch circle and put it in fridge for 10-15 minutes.

2. Soak yellow dry peas for 5-6 hours. When peas are soaked properly, pressure cook or boil it until peas are soft. In a pan, heat 2 tbsp of oil, add cumin seeds and mustard seeds. When mustard seeds starts to crackle, add asafoetida, cooked yellow peas, turmeric powder, red chili powder, salt and 2 cups water. Cook until mixture starts boiling and turn off the gas/stove.

3. Heat 2 tbsp of oil in non-stick or cast iron pan. Saute 5-6 patties until it golden brown from both sides. Do not overcrowd the pan.

5. In a bowl, arrange 4 patties, add ragda mixture, few pieces of chopped tomato and onion, green chutney (spicy), date tamarind chutney (sweet) and coriander. Enjoy it when it is still hot.
