Zucchini Corn Omelet/Pancake

Hello Friends,

Presenting egg-less omelet recipe. It is an Indian version of spicy pancakes. It is made of mix flours. All the flours in this recipe are available in Indian grocery stores

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Ingredients:

Gram flour / Besan – 1 cup
Barji flour – 1/2 cup
Corn flour – 1/4 cup
Ragi/Nachni flour – 1/4 cup
Grated Zucchini or Long Squash/Bottle guard – 1 cup
Frozen corn – 1/2 cup
Ajwain seeds- 1 tsp
Sour yogurt – 1 cup
Grated Garlic – 4 cloves
Finely chopped Chilies as per your taste
Turmeric powder (optional) – 1 tsp
Salt to taste
Oil for cooking

Procedure

1. Mix gram flour, bajri flour, corn flour, ragi flour, grated zucchini, frozen corn, ajwain seeds, and yogurt in a pot and add about 3/4th cup of water and mix properly. Consistency of the batter should be little thick. Leave it in a warm place for 7-8 hours.

2. When you are ready to make omelet, add grated garlic, small pieces of chili, turmeric powder, salt and mix well.

3. Heat a frying pan/Tawa and grease it with oil.

4. Spread the better on the hot pan, keep it think like pancakes. Cook on one side and sprinkle 1/2 tsp of oil and flip it carefully.

5. When it ready, serve with cucumber raita, chutney or pickle.
