Preparation time: 10 minutes
Cooking time: 10-12 minutes, approximately
Difficulty: Easy
Ingredients
½ big radish or 2 small radishes or 8-10 red radishes
2 tomatoes
2–3 garlic cloves
1 onion
1 jalapeño
A handful of fresh coriander leaves, including stems
½ teaspoon cumin seed powder
2 tablespoons lemon juice
Salt to taste
1 tablespoon oil, for roasting
Instructions
1. Prepare the vegetables: Wash the vegetables and slice the radish, tomatoes, garlic, onion, and jalapeño lengthwise.
2. Heat the pan: Heat a wide-bottomed pan over medium-high heat. Once hot, reduce the heat to medium and add 1 tablespoon of oil.
3. Char the vegetables: Arrange the sliced vegetables in a single layer. Cook until one side is nicely charred, then flip and cook the other side. The tomato skins should loosen and come off easily.
4. Roughly chop: Remove the roasted vegetables from the pan and roughly chop them once cool enough to handle.
5. Process the salsa: Add the roasted vegetables, fresh coriander leaves with stems, and salt to a food processor. Pulse until you reach your preferred texture — chunky or finely chopped.
6. Add the finishing touches: Add the cumin powder and lemon juice. Mix well, taste, and adjust the seasoning as needed.
7. Serve and enjoy: Serve fresh with your favourite nachos, quesadillas, or pakodas. You can also enjoy it as a flavorful condiment alongside your meals.
