Horsegram (Kulith) Chutney

I have share many chutney recipes like coconut chutney and chana and urad dal chutney , peanut chutney, tomato chutney all of which pair perfectly with South Indian cuisine. I have also shared variety of  chutney recipes. Many Indian appetizers like samosa, pakora, batata vada, dahi vada, aloo tikki are served with chutney.

I have been planning to share the recipe for horsegram (kulith) chutney for quite sometime.

Horsegram chutney, also known as Kollu Thuvayal or Huruli Chutney, is a traditional South Indian condiment made from horsegram, coconut, garlic, and spices. This chutney is not only a flavorful accompaniment to various dishes but also packed with numerous health benefits. This chutney freezes well so prepare extra.

Here’s a simple recipe to make horsegram chutney:

Preparation Time: 15 minutes

Cooking Time: 10 minutes

Ingredients:
– 1/2 cup horsegram
– 1/2 cup grated dry coconut
– 3-4 dry red chilies
– 1 tsp coriander seeds
– 1 tsp cumin seeds
– 1 tsp urad dal
– 1 tsp chana dal
– 3-4 cloves garlic
– 1 teaspoon tamarind paste
– Salt to taste
Tempering:
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1/2 tsp cumin sees
– A pinch of asafoetida
– Curry leaves

Instructions
1. Dry Roast Horsegram: Roast horsegram in a pan until lightly browned and aromatic. Soak in water for 2-3 hours. You can make chutney without soaking but I prefer soaking which helps in easy digestion.

2. Roast Ingredients: Heat oil in a pan, add urad dal, chana dal, coriander seeds, and cumin seeds. Sauté until they start changing color. Add whole red chilies and garlic cloves, roast for 1-2 minutes. Turn off the heat and then add shredded coconut and mix.

3. Grind Chutney: Combine soaked horsegram, roasted ingredients, salt, and tamarind in a blender. Grind to a slightly coarse paste, adding water as needed.

4. Temper Chutney: Heat oil in a pan, add mustard seeds and cumin seeds. Once mustard seeds splutter, add asafetida and curry leaves. Pour the tempering over the chutney and mix well.

– Use freshly coconut for the best flavor.
–  Adjust the number of dry red chilies according to your desired spice level.
– Garlic is optional.
– Serve horsegram chutney with idli, dosa, medu vada, paratha or rice for a nutritious and delicious meal.
