I can literary eat this every single day with my meal…. the most delicious, super healthy salad made with just few ingredients. Summer is here and we look for food which is fresh and not so hot. This salad is perfect for those hot days.
Beetroots are packed with essential nutrients, they are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. Beet is linked to the improvement of a variety of conditions, especially for anemia. Researchers found that people who drank 250 milliliters (or about 8.4 ounces) of beet juice daily lowered both systolic and diastolic blood pressure. Nitrates, compounds in beet juice that convert into nitric oxide in the blood and help widen and relax blood vessels, are thought to be the cause. (Source – Google)
I find it hard to incorporate beets in my food as it adds slight sweet taste. My brother mentioned this salad few times and he said it tastes amazing, so decided to give it a try! I am so glad I did!! You just need 4 ingredients. Now this became one of my favourite salad of all time! I do prepare many different vegetarian salad, you can find all recipes here.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
1 Big or 2-3 small beetroot boiled and grated
1/3 cup peanuts roasted and skinned
1 tbsp. lemon juice
Salt to taste
Chopped coriander/cilantro for garnishing
1. Pressure cook beets for 4-5 whistle. After it cools down, remove skin and grate it.
2. Roast peanuts until skin can easily pill off. Remove skin and crush coarsely.
3. In a mixing bowl, add grated beetroot, roasted crush peanuts, little salt, lemon juice and chopped cilantro. Mix well. Garnish with chopped peanuts and cilantro.
4. Enjoy this delicious refreshing salad with your meal. The crunch from peanuts taste amazing with soft beetroots. I was generous with lemon juice which added tons of flavour. I would highly recommend you to give this salad a try!
