As a vegetarian whole my life, I have learned to add the ingredients in my food which are high in protein. I never ever had problem with low protein. I tried to add lots of different types of beans and nuts in my diet. Here is another very healthy, high in protein salad from my kitchen. You may know that brown chickpeas are high in protein and peanuts are a good source of healthful fats, protein, and fiber. Combine this 2 and voilà!! You have a bowl full of very healthy salad which not only satisfies your taste bud but also fills your tummy. This is a good for breakfast, light meal or afternoon snacks.
You can find these dry brown chickpeas (chana) in any Indian grocery stores.
Preparation Time: 10-15 minutes
Cooking Time: 25-30 minutes if you use pressure cooker
1 cup boiled brown chickpea (chana)
1/2 cup boiled peanuts
1 tomato chopped
1 small onion finely chopped
1 small carrot grated
Fresh coriander chopped
Small pinch of cumin powder
1. Take handful of dry brown chana. Soak it for 4-5 hours dipped in water. It will double in size. Then rise and add some water and little salt. Pressure cook for 4-5 whistle or cook until soft. Remove the water before adding to salad.
2. Take 1/2 cup dry peanuts in a bowl. Add some water and salt. Pressure cook for 2-3 whistle or cook on stove top until slightly cooked but still has a bite. Remove any additional water before adding to salad.
3. Mix all the ingredients in a salad bowl. Add salt and lemon juice as per your taste. Garnish with chopped coriander and pumpkin seeds. Eat when it is fresh.
This salad is so refreshing and has different textures. It is a bowl full of goodness. You can add walnuts, almond and different types of seeds. You can also add veggies of your choice. You can covert this into chat by adding roasted or fried split chana, sev, chutney, etc. If you like herbs, you can add mint, basil. This is a very versatile salad, so use your imagination.
