Vegetarian Burger

Dear Friends,

People always think that having small kids and pack their lunch is hard but believe me it gets harder when they grow up. I always say it is a growing pain, never gets easier. They don’t want to take some of the items for lunch when they are working because either it smells or it is hard to eat in front of coworkers. I go through this all the time. My son doesn’t like to take many items for lunch and end up eating outside food which is expensive and unhealthy.

One day I was so mad at him and asked him what he like to take for lunch? he said I like burger. So I made almost 10-12 burger patties and freeze them. Now whenever he wants, he can cook a patty and pack burger for the lunch. I know what you are thinking….there are veggie burger available in the store but I still prefer homemade healthy burger so I know what he puts in his mouth.

Preparation time: 30 minutes

Cooking Time: 30 minutes

2 cups dry chickpeas soaked and boiled or you can use canned chickpeas
1 carrot finely chopped
1 big onion finely chopped
7-8 mushrooms finely chopped
1 bread slice crumbled
1/2 tsp hot pepper powder
1 tsp dry basil (optional)
1/2 tsp black pepper powder
Salt to taste

1. Soak dry chickpeas 6-7 hours and cook it until it is soft or pressure cook until 4 whistles. You can also use canned chickpeas. In a pan heat oil, saute chopped carrot, onion and mushroom until vegetables are slightly soft. Make crumbs from a bread.

2. In food processor, combine everything and process until everything gets crushed properly. Remove the mixture in the big bowl. Add hot pepper powder, dry basil flakes, black pepper powder and salt. Mix well. You can also add chopped walnut which gives nice crunch while eating. If mixture is too dry then sprinkle some water and make patties. Layer in a big airtight container using parchment paper. IMG_6991IMG_69973. Burger patties are ready for use. You can use it same day or freeze it for future. It stays good for 2-3 months in the freezer. When you want to eat, cook on non stick or cast iron pan and dress with your choice of sauce, cheese and salad.  Vegetarian Burger
