This salad is so simple to make but extremely refreshing and delicious. It’s nutritious, colourful, and perfect with lunch or dinner!
Preparation Time: 10 minutes
Cooking Time: 0 minutes
2 cup shredded (thinly sliced) cabbage
1 small beet grated
1 apple grated (I used McIntosh)
1 tbsp honey
1 tbsp lemon juice
1 tbsp extra virgin olive oil (EVOO)
Salt to taste
Pinch of black pepper powder
Few sweet basil leaves (optional)
1. In a bowl, mix all dressing ingredients.
2. Thinly slice or finely chop cabbage, grate apple and a beet.
3. Mix dressing with cabbage, beet and apple mixture immediately before apple starts to change the colour. Also add chopped basil or coriander leaves. Mix well. Voila…coleslaw is ready! This easy, mouth-watering recipe is a must-try!
