Puri for Pani puri / Golgappa

Hello Friends,

The Puri recipe I am presenting here is tested for years and always worked for me. These Puris are filled with spicy water, mashed potato, boiled chana, chickpeas or curried white peas. This is all time favorite in my house. Our dinner schedule changes when we have Pani Puri for dinner 🙂

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Ingredients:

Semolina / Sooji – 1 cups (makes around 50 to 60 puris)
Salt to taste
Warm water
Oil for frying

Procedure:

1. Mix semolina and salt in mixing bowl and make soft dough with warm water.

2. Let the dough rest for at least an hour.

3. Knead the dough until texture is smooth. Make marble size balls of the dough, and keep it covered otherwise they dry out quickly.

4. Roll the puris thin or you can use Tortilla maker to make puris.

5. Fry first in hot and then medium heat turning occasionally. I would suggest to make one batch at a time.

6. Fry until it is golden brown on both sides and crispy.

7. Remove on paper towel so excess oil is absorbed. Puris are now ready.

8. Serve this puris with pani (spicy water), yellow peas, cooked with salt and turmeric powder, boiled brown sprouted chana and dates-tamarind chutney
