Chili Cheese Toast with a High-Protein Twist – Quick, Colorful, and Comforting! 

When you think of comfort food that comes together in minutes, is loaded with flavor, and still packs in a punch of nutrition — Chili Cheese Toast might not be the first thing that comes to mind. But what if we upgraded it?

Say hello to this High-Protein Chili Cheese Toast, made with a smart combo of high-protein cottage cheese, melty mozzarella, and the vibrant crunch of multi-colored bell peppers spread on home made sourdough bread. All tied together with a hit of Italian seasoning and a gentle chili kick.

Whether you’re making a quick snack, a light lunch, or party appetizers, this version gives you all the cheesy goodness without going overboard on the guilt. This recipe turned out so good that I prepared again next day LOL.

This recipe serves 2 people.

Preparation Time: 10 minutes

Cooking Time: 15-20 minutes

Ingredients:

  • 6-8 slides sourdough or whole grain or multigrain bread
  • 1 cup high-protein cottage cheese
  • 1/2 cup mozzarella cheese (shredded)
  • 1½ cup bell peppers (red, yellow, green – finely chopped)
  • ½ cup frozen or fresh corn
  • 1 fresh green chili or 1/4 tsp chili flakes or both – to taste
  • 1 garlic clove minced
  • 1 tsp+ Italian seasoning
  • Salt to taste
  • Chili oil (optional)
How to Make It:
1. Preheat your oven or toaster oven to 180°C (350°F).
2. In a bowl, mix the cottage cheese, mozzarella, chopped bell peppers, fresh/frozen corn, minced garlic, chili, Italian seasoning and salt.
3. Spread the cheesy mixture generously over each slice. Sprinkle little Italian seasoning on the top.
4. Bake for 10-15 minutes or until the cheese melts and the edges are golden. Broil for an extra 1–2 minutes if you like it bubbly and slightly charred on top.
5. Bake using air fryer. Preheat the air fryer on the bake mode. Air fry for 15-20 mins and then broil for 1 mins.
6. Garnish with sprinkle of chili flakes or chili oil and serve hot!
