Chili Cheese Toast with a High-Protein Twist – Quick, Colorful, and Comforting!

Say hello to this High-Protein Chili Cheese Toast, made with a smart combo of high-protein cottage cheese, melty mozzarella, and the vibrant crunch of multi-colored bell peppers spread on home made sourdough bread. All tied together with a hit of Italian seasoning and a gentle chili kick.
Whether you’re making a quick snack, a light lunch, or party appetizers, this version gives you all the cheesy goodness without going overboard on the guilt. This recipe turned out so good that I prepared again next day LOL.
This recipe serves 2 people.
Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Ingredients:
- 6-8 slides sourdough or whole grain or multigrain bread
- 1 cup high-protein cottage cheese
- 1/2 cup mozzarella cheese (shredded)
- 1½ cup bell peppers (red, yellow, green – finely chopped)
- ½ cup frozen or fresh corn
- 1 fresh green chili or 1/4 tsp chili flakes or both – to taste
- 1 garlic clove minced
- 1 tsp+ Italian seasoning
- Salt to taste
- Chili oil (optional)
- Cottage cheese brings in protein without being too heavy or greasy.
- Mozzarella adds that satisfying melt.
- Bell peppers offer crunch, color, and vitamin C.
- And the Italian seasoning + chili combo gives it a herby heat that’s hard to resist.
Pair it with a hot cup of chai, coffee, or any soup (tomato soup) — and you’ve got yourself a meal that’s fast, flavorful, and surprisingly nourishing.
