Mango season is almost close to end. Mangoes we get during this time are over ripped. I love my aamras to be balanced not too sweet not too sour. What do I do?
Trick 1: In my house we use milk to dilute mango raas (aamras). But when my mangoes are over ripe I add yogurt and tiny pinch of salt to balance out the sweetness. It works perfectly.
Trick 2: This is the best one I figured out. While making my aamras using extremely sweet mangoes (which was already diluted), I remembered amchur (mango powder) I had in my pantry. I added little amchur to aamras (mango juice) and I could not believe that I was eating the same aamras. It was perfect blend of sweet and sour.
Tip: Just to make aamras easy to digest, add pinch of dry ginger powder (soonth). It taste amazing and will help in digestion.
