In India people eat more of this kind of stir fry than raw salads, it is called sambharo in Gujarati. This is a quick stir fry and all veggies are still crunchy. It is sautéed using simple ingredients. This recipe is so simple yet very delicious. I am using cabbage, green pepper and carrot.. I also added jalapeno which gives this dish a spice kick 😋. You can add veggies of your choice like broccoli, cucumber, ivy gourd (tindora), etc. which can be eaten raw. This crunchy side dish complements our main meal like roti, curried vegetable, dal and rice. It’s nutritious, colourful, and perfect for lunch or dinner!
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Ingredients:
1 1/2 cup cabbage thinly sliced
1 green pepper cut in thin strips
2 red carrot thinly sliced
1 jalapeno thinly sliced
1 tsp mustard seeds
1 tsp cumin seeds
1/4 tsp turmeric powder
1 tbsp lemon juice
Salt to taste
Oil for cooking
Chopped coriander/cilantro for garnishing
Procedure
1. Chop all vegetables and keep them separate. Sprinkle little salt on shredded cabbage.
2. In a pan, heat 1 tbsp oil on medium heat. Add mustard and cumin seeds to the oil. When the seeds start to pop, add carrot, jalapeno and green pepper and saute for a minute. Then add cabbage and turmeric powder and mix well. Cook for 1-2 minutes stirring frequently. Then add lemon juice and mix well. Adjust salt if needed. Turn off the heat. Vegetables in this dish needs slight crunch so don’t over cook.
3. When ready, transfer to clean bowl. Garnish with fresh coriander leaves Enjoy this crunchy side dish with your main dish during lunch or dinner. It is very healthy as veggies are cooked in little oil.
