Jiralu Powder

Recently my daughter-in-law was looking for jiralu masala which is her favourite. She tried few stores in US but could not find anywhere. I remember my mom used to prepare it at home all the time. I called my mom and asked her for the recipe. This is my mom’s recipe, she used to make the best jiralu. It is super quick and easy recipe. You can prepare this in under 10 minutes, way before you can go and find it in store. Any Indian house will find most of these ingredients in their pantry.

I think everyone in India must have tasted this at least once. It’s a perfect blend of spices which we sprinkle on bread & butter, salad, raita, chaas, khakhra (crisp roti), lemonade, etc. It adds lot of flavour and taste to everything. It also helps in digestion. It is a very simple recipe. There no cooking involve, Just mix the spices and blend it together.

Preparation Time: 10 minutes

Cooking Time: 0 minutes

Ingredients:

1 cup cumin seeds
2 tbsp dry ginger powder
1/4 tsp turmeric powder
1/4 tsp red chili powder
1/4 tsp asafoetida
1 tbsp dry mango powder (optional)
Black salt (sanchal) to taste
Salt to taste

Procedure:

1. Sun dry cumin for 2-3 hours. Powder raw cumin in a dry grinder or coffee grinder. Do not roast cumin as it will change the colour of jiralu. In the same jar, add ginger powder, turmeric powder, red chili powder, asafoetida, mango powder. Also add regular salt and black salt half and half as per your taste. You can always add additional salt if it’s taste blend. Grind one more time to smooth powder so everything blends properly. Taste and adjust the salt. Sieve through fine sifter.

2. Store this in a clean dry airtight container and keep it in your pantry. You only need a tiny pinch to add to fruits or salad or anything. It will add burst of flavours. Remember this powder is slightly over salty so just sprinkle.

You can sprinkle this on bread and butter, raita, fruits, chaas (buttermilk) and many more to enhance the flavour. So next time you are out of jiralu or want to try it first time, do prepare at home. Also let me know if you have any questions regarding this recipe.
