Have you ever tried making chat with fresh corn? Me neither. Corns are available in plenty during summer here in Canada. We roast on barbecue or stove, once ready, spread lemon juice, chili powder and salt and it is good to go. During one weekend, I didn’t have plan for the dinner and last-minute I thought of making something chatpata (spicy and tangy). As usual my brain started working on the idea for light supper/dinner. I had 2 fresh corn on the cobs lying around so thought of making something out of it. I make corn pakoda (fritter), spicy pancakes with sweet corn and soup but never thought of making chat. I didn’t want to spend time but wanted to eat something spicy so decided to make this chat.
Here is how I made this delicious chat 1st time with corn and already made few times after it 😛 😛 .
Preparation time: 15 minutes
Cooking Time: 3 minutes
Ingredients:
2 corn on the cobs
Oil/butter
Onion finely chopped
Ripe tomato finely chopped
1 green chili finely chopped
Lemon juice
Salt
Crispy puri
Bombay mix
Salt
Besan sev (thin) for garnishing
Chopped coriander leaves for garnishing
Procedure
1. Chop onion, tomato, green chili, and fresh coriander. Slightly crush puris.
2. Remove corn from the cob by using sharp knife. I cut the top of the corn 1st so it can be hold straight on the plate. Then using sharp knife, cut with the knife straight from top to bottom holding corn handle on the top.
3. Heat a pan, add little oil or butter. Add corn kernels and saute for 2-3 minutes until you see brown marks on the corn kernels.
4. In a bowl, add together all ingredients except besan sev and chopped coriander leaves. Keep some Bombay mix on side for garnishing. Mix well.
5. Serve this chat in a bowl, garnish with chopped coriander, sev and Bombay mix and serve immediately…it is hard to wait anyway!
It is a crowd pleasure. Kids will enjoy it too. You can serve it as an appetizer or good for light supper during the weekend. We love to eat it alone but you can serve as a side with Pani Puri. You can use flat puri from pani puri to make this dish. Avoid using butter to saute corn if you are on vegan diet. Skip onion if you are on onion free diet. You can also add roasted peanuts, pomegranate seeds, boiled potato if you like.
