Hello Fellow Chefs,
Today, I’m going to share with you a recipe that I learnt from my sister-in-law a couple years ago. It’s very easy to make and tastes great! It’s nutritious, colourful, and perfect for lunch or dinner! You can add whichever veggies you like, but I’ll share how I made it. This recipe serves 3 people.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
1 potato, diced in long rectangles
1 carrot, diced in long rectangles
1 onion, halved and diced long
1 yellow pepper, diced in long rectangles
1 cup green beans, diced diagonally
1 teaspoon cumin seeds
2 teaspoons garam masala
1 teaspoon aamchur powder
1 teaspoon coriander powder
1 tablespoon vegetable oil
Salt to taste
Procedure
1. In a large non-stick pan, heat oil on medium heat. Add cumin seeds to the oil. When the seeds start to pop, add all the vegetables and saute on medium heat for 5 mins. Reduce the heat to a low setting. Add salt to the mixture and cover, allowing the vegetables to cook slowly. Stir the mixture every few minutes.
2. Once the vegetables are soft and cooked (approximately after 15-20 mins), push the mixture to one side of the pan and in the empty space, add all the spices. Allow the spices to cook for a minute, then mix the whole sabji together. Once its thoroughly mixed, turn off the stove. The sabji is ready to be served.
3. We enjoyed this sabji with roti, Gujarati kadhi, and a mango! This easy, mouth-watering recipe is a must-try!
