Ingredients
• Dried green coriander leaves
• Dried mint leaves
• Roasted chana dal (daalia)
• Dried green chilies
• Cumin seeds
• Aamchur powder
• Ginger powder
• Salt

How to Dry Coriander, Mint & Green Chilies

Drying Coriander Leaves
Wash fresh coriander thoroughly and pat dry completely. Spread the leaves on a clean cloth or tray and allow them to air dry in shade for 2–3 days until crisp. You can also dry them in a dehydrator or oven at the lowest temperature.

Drying Mint Leaves
Separate mint leaves from the stems, wash gently, and dry fully before spreading them on a tray. Keep them in a well-ventilated shaded area until they become dry and crumbly.

Drying Green Chilies
Wash and wipe the green chilies completely dry. Slice them slightly and sun dry or dehydrate until they become crisp. Make sure there is no moisture left to improve shelf life.

Method
1. Add dried coriander leaves, dried mint leaves, roasted chana dal, dried green chilies, cumin seeds, aamchur powder, ginger powder and salt to a grinder.
2. Grind everything into a fine powder.
3. Add one black pepper size citric acid (this is completely optional but it gives nice tangy taste) and mix well.
3. Store the premix in an airtight container in a cool and dry place.

How to Use

To make instant green chutney:
• Take 2–3 tablespoons of the premix
• Add water as needed
• Mix well to form a smooth chutney
• Store in clean dry container
