Hello Fellow Chefs,
This salad is very popular among Gujarati’s in India and around the world. Gujaratis call this papaya khaman mean grated papaya and serve with Gathia, the most famous Gujarati snack. Green or raw papaya is easily available in India. When I moved to Canada, I didn’t see it in any Canadian or Indian grocery store. While visiting Chinese store, I saw the green papaya and my happiness was beyond imagination. Since then, I always visit Chinese store whenever I feel like making green papaya salad at home.
Papaya is packed with vitamin A, vitamin C, dietary fiber, potassium and many other nutrients.
The recipe is very easy and needs few ingredients which are usually found in regular pantry. Once someone get hooked to the taste, it is never enough. Recently I made papaya salad so thought of documenting it for you all.
Preparation Time: 10 minutes
Cooking Time: 6-8 minutes
Ingredients:
1 medium size green papaya
2 jalapeno or green chilies
Salt to taste
Oil for cooking
1 tsp mustard seeds
1 tsp cumin seeds
Pinch of asafoetida
1/2 tsp turmeric powder
2 tbsp lemon juice
Chopped coriander/cilantro for garnishing
Procedure:
1. Remove skin from papaya and grate. Thinly slice jalapeno or green chilies.
2. In a pan, heat oil on medium heat. Add mustard and cumin seeds to the oil. When the seeds start to pop, lower the heat. Add asafoetida and turmeric powder. Immediately add grated papaya before turmeric powder starts to burn. Add jalapeno, saute for 1 minute. Then add grated papaya, salt and cook on low heat covering the lid. In 3-4 minutes papaya will cook slightly, then add lemon juice and mix well. Adjust salt if needed. Saute for 1 more minute. Remove from the heat. Papaya in this dish needs slight crunch so don’t over cook.
3. When ready, transfer to clean bowl. Garnish with fresh coriander leaves Enjoy this side dish with Gathiya for breakfast on lazy weekend or as a side dish with lunch or dinner. This is such an easy salad with absolute delicious taste! Try it yourself!

This looks so fresh but is a green papaya just an unripe one? I’ve only been able to buy the orange ones here in France,

Thank you so much. Yes, it is just unripe papaya. You may want to try it in Chinese store, they usually carry it.
