When life gives you pineapple use it 😉 😉 . I have tried to use pineapple to create something very delicious. I bought this huge pineapple recently. We tried to eat it but it was too big to finish just like that. I was thinking of ideas to use it. One day I made Thai curry using pineapple. I still had more to use. So next day when I was making paneer paratha, I decided to make raita on the side using pineapple and mango. I made this humongous bowl full of raita between 4 of us and we finished it XD XD. It was soooooo delicious that this will be prepared again and again.
Preparation Time: 10 minutes
Cooking Time: 0 minutes
Ingredients:
Yogurt – 2 cups
Small chunks of pineapple – 1 cup
Small pieces of mango – 1 cup
Small pieces of boiled potato – 1/2 cup
Small pieces of cucumber – 1/2 cup
Finely chopped red onion – 1/4 cup
Finely chopped green chili – 1
Chopped coriander leaves
Chopped mint leaves
Salt to taste
Cumin powder or chat masala
Procedure
1. Prepare all the fruits and vegetables as mentioned above. For cucumber, add little salt in chopped cucumber, keep on side for few minutes. Then squeeze cucumber between palms to remove all excess water.
2. In a big mixing bowl, add the ingredients.
3.Whisk yogurt before adding to the bowl. Add salt and cumin powder or chat powder. Mix everything well. Chill and serve.
This raita has tropical flavours. Sweetness from pineapple and mango, heat from chili and flavour of mint makes this raita a no.1 choice. Serve this refreshing raita with paratha, biryani or spicy pancakes. If mangoes are out of season, you can use other seasonal fruits.

The recipe looks very tempting but I have one question
You have used pineapple as it is so doesn’t it turn bitter? Or you just add all the things at the time of serving?
We normally cook and use it in Raita to prevent bitterness.
