Carrot Peanuts Salad

I have been hooked to this salad since I ate this at my aunt’s house first time almost 30 years back. I prepare this very often. Carrots are so easy to find in any season so as peanuts. Try mixing both and you have this amazing tasting side dish that goes well with every meal. It is super healthy and has this natural sweetness from fresh carrots. This recipe is so simple yet very delicious. It’s nutritious, colourful, and perfect with any meal!

Preparation Time: 10 minutes

Cooking Time: 5 minutes

Ingredients:
3-4 carrots grated
1/3 cup raw peanuts
2-3 green chilies slice thinly
1 tsp cumin seeds
1 tbsp lemon juice
Salt to taste
Oil for cooking
Chopped coriander/cilantro for garnishing

Procedure

1. Grate carrots and thinly slice green chilies.
2. In a pan, heat oil on medium heat. Add cumin seeds and peanuts to the oil. Roast on slow. When peanuts starts to turn light brown, add green chili. Saute for a minute and then add grated carrot and salt (very little salt, so you can taste the sweetness of carrot). Mix well. Cook on low for 2-3 minutes. Add lemon juice, mix well.

3. When ready, transfer to clean bowl. This easy, mouth-watering side dish is a must-try! You can make extra and it stays good in fridge for couple of days.
